Luscious apple cinnamon crepes are a wow dessert that will impress your guests and leave smiles on their faces!

The Backstory: Every now and then I love to go all out and whip up a wow dish that’s a real showstopper for my friends and family. Crepes are definitely that kind of dish, and truth be told, they’re not that hard to make. Having all your ingredients prepped and ready to go is key, but once you’ve done that, you’re good to go. My recipe lightens up traditional crepes but keeps the flavor full-on, with a combination of delicious fall flavors and spices. Fresh apples, apple pie filling and cinnamon combine for a mouth-watering filling that’s truly delicious. I hope you’ll try this recipe and see for yourself just what you can do in the kitchen! Apple Cinnamon Crepes

These delectable crepes are a perfect brunch entree (talk about a wow dish for your guests!) or as a dessert when you really want to go all out. Light, delicate, and full of fall flavors from the apples, cinnamon, and apple pie filling...YUM!

Ingredients

For the Crepes

  • 1 1/4 cups all-purpose white flour
  • 1/4 cup granulated sugar
  • 1/4 tsp. Salt
  • 1/4 cup whole eggs
  • 1/4 cup egg whites
  • 1 2/3 cup skim milk

For the Filling

  • 3 cup (3/4 lb) fresh apples, peeled, cored and diced
  • 1 1/4 cups (1 lb + 2 oz) apple pie filling
  • 1 tsp. ground cinnamon
  • 1 tsp. lemon juice

Instructions

  1. Place flour, sugar and salt in a bowl and stir. Set aside.
  2. Whisk eggs in a separate bowl or mix on low speed.
  3. Make a well in the center of the flour mixture and add the eggs.
  4. Mix egg and flour while pouring in the milk, stirring well to combine. The batter should be free of lumps. Let stand for 5 minutes.
  5. Spray a non-stick skillet with non-stick cooking spray.
  6. For each crepe, heat skillet on medium-high. Add a 1/4 cup (4 oz) of batter to saute pan.
  7. As the edges cook, use a spatula to lift the edges of the crepe.
  8. After about 1 minute, flip the crepe over and cook for a further 30 seconds. Transfer to a plate and start over until the batter is done.
  9. To make filling, plate fresh apples in a non-stick pot (or one sprayed with non-stick spray) and heat until slightly softened.
  10. Add pie filling, cinnamon and lemon juice and continue heating until low boil. Let simmer until apples are softened.
  11. Fill each crepe with 1/4 cup apple mixture.
  12. Wrap each crepe by bringing in sides first and and then rolling away from you to seal edges.
