Fruit Flan with Fresh Berries – Healthy Option

The Backstory: Making flan may seem intimidating at first but it’s just as easy as making a pie. There’s a base, a filling, and a simple topping. My easy (and delicious) recipe for Fruit Flan with Fresh Berries will turn you into a master pastry chef within 20 minutes and have your guests asking for the recipe. Fresh berries are the star of this scrumptious dessert and they are incorporated into the filing and the sweet and tart topping. Fruit Flan with Fresh Berries - Healthy Option

This delicious dessert satisfies on all fronts: creamy, fruity, sweet and tart. Fresh berries top a decadent filling and melt in your mouth crust. This flan is also beautiful on the table and perfect for a special occasion when you really want to impress.

Ingredients

For the Base

  • 1 1/2 tsp. baking powder
  • 1 1/2 cups all-purpose white flour
  • 2 large egg whites
  • 1/3 cup light margarine (50% reduced fat), soft/tub, zero trans fat
  • 1/2 cup brown sugar
  • 1 tsp. vanilla extract

For the Filling

  • 1/4 cup granulated sugar
  • 2 tbsp. all-purpose white flour
  • 1 cup fresh blueberries
  • 1 lb. (3 cups) fresh strawberries, sliced

For the Topping

  • 2/3 cup fresh blueberries
  • 1 cup fresh strawberries, halved

Instructions

  1. In food processor, combine ingredients for base.
  2. Press base mixture onto bottom of 11-inch round cake pan.
  3. For filling, mix sugar and flour in bowl. Toss with blueberries and strawberries.
  4. Spoon fruit mixture over base.
  5. Bake at 350 degrees for approximately 35-40 minutes until bubbly. Let cool under refrigeration at 40 degrees F.
  6. For topping, arrange blueberries and strawberries over flan.
  7. Slice into 10 pieces and serve.
