Mediterranean Salad - Healthy Option
- 1/4 cup lemon juice
- 2 tbsp olive oil
- 1 tbsp. water
- 1/4 tsp. Salt
- 1/8 tsp. pepper
- 4 cups Romaine lettuce, shredded
- 1 15.5 oz. can chickpeas, drained
- 1 14 oz. can water-packed artichoke hearts, drained, halved
- 1 cup roasted red peppers, cut into strips*
- 1 cup grape tomates
To make dressing, mix the first 5 ingredients in a bowl and set aside.
Toss the remaining ingredients together with the dressing.
