  • 1/4 cup lemon juice
  • 2 tbsp olive oil
  • 1 tbsp. water
  • 1/4 tsp. Salt
  • 1/8 tsp. pepper
  • 4 cups Romaine lettuce, shredded
  • 1 15.5 oz. can chickpeas, drained
  • 1 14 oz. can water-packed artichoke hearts, drained, halved
  • 1 cup roasted red peppers, cut into strips*
  • 1 cup grape tomates


  1. To make dressing, mix the first 5 ingredients in a bowl and set aside.
  2. Toss the remaining ingredients together with the dressing.
